Scones using Whey Protein Concentrate

Servings: 8-10

Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons of McLeod Nutrition Whey Protein Concentrate powder
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup milk (any type)
  • 1 teaspoon vanilla extract
  • Optional add-ins: dried fruits, chocolate chips

Instructions:

  1. Preheat your oven to 200°C and line a baking sheet with baking paper.
  2. In a large mixing bowl, combine the flour, McLeod Nutrition Whey Protein Concentrate powder, sugar, baking powder, and salt. Mix well.
  3. Add the cold cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  4. In a separate small bowl, whisk together the milk and vanilla extract.
  5. Pour the milk mixture into the flour mixture and gently stir until just combined. If using any optional add-ins, fold them in at this stage.
  6. Transfer the dough onto a lightly floured surface. Pat it down into a circle, approximately 1 inch thick.
  7. Using a sharp knife or a round biscuit cutter, cut the dough into scone shapes and place them onto the prepared baking sheet.
  8. Bake for 12-15 minutes, or until the scones are golden brown on top.
  9. Remove from the oven and let them cool on a wire rack.
  10. Serve the scones warm or at room temperature with butter, jam, or whipped cream.
